Pisyu Loon (or Pisyun Loon) is a traditional flavored salt from the Himalayan state of Uttarakhand, India. Literally translating to “ground salt” in local dialects, it is an artisanal seasoning made by hand-grinding Himalayan rock salt with fresh mountain herbs and spices on a traditional stone grinder called a sil-batta.
Key Characteristics
- Traditional Method: Authentic Pisyu Loon is never machine-ground; the use of a sil-batta ensures the salt retains its natural essential oils and vibrant aroma.
- Ingredients: Common ingredients include green chillies, garlic, coriander, ginger, cumin (jeera), turmeric, and unique mountain herbs like Timur (Sichuan pepper) or Bhang (hemp seeds).
- Health Benefits: Local residents value it for aiding digestion and boosting metabolism due to its high mineral content and herbal additives.
- Cultural Significance: Often referred to as the “soul of mountain food,” it is a staple in Garhwali and Kumaoni households, typically served with fruits like cucumbers, or as a condiment with meals.
